Tasting Notes: This Junmai Daiginjo is certified Kosher and Vegan. Characterized by its exquisitely balanced ginjo aroma, the unique umami of Yamada Nishiki rice, and clean finish. A Gold Award winner in the Premium Daiginjo category of the Fine Sake Awards for four consecutive years. The sake lees of this sake are aged for over three years then brewed together with Junmai sake in a large 30-koku wooden vat to create Saika's Ginjo Red Vinegar. The ultimate pairing for this sake is sushi made with Saika's Ginjo Red Vinegar!
